Chicken Gumbo Recipe



This is a fantastic chicken Gumbo recipe that takes less than 35 Minutes to prepare and cook. For those of you who are unaware of what Chicken Gumbo is, take a look on Wikipedia.

Ingredients

  • 1 Whole cooked chicken (baked preferably)

  • 500g Toin of Chopped Tomatoes

  • 2 Tbsp Lard

  • 1 Green or red pepper

  • 1 1/2 Gumbo powder

  • 1/2 cup Basmati rice

  • 2 sticks celery, chpped

  • 1.2 Litres chicken stock

  • 200g Okra, Sliced

  • 2 tbsp Plain Flour

  • Salt and pepper

  • Thyme

  • Onions, finely chopped

Chicken Gumbo, Chicken Stew

Method

Heat a large pan over a gentle heat and melt the lard. Slowly add the flour and cook for about 8 minutes. Keep stirring.

Slice up the onions and the red pepper and throw them in and cook gently for a further 5 minutes.

Add about 1/4 of the chicken stock and slowly bring it to the boilo and then back down to a simmer.

Add the all of the vegetables, salt and pepper, the herbs and the rest of the chicken stock.

Chop up the chicken and add all of it, the edible bits anyway. Reduce the temperature and let it simmer, covered for about 30 minutes. Stir every 10 minutes or so. Add salt and pepper to taste.
