A Simple Chicken Parmesan Recipe

This is a really simple chicken parmesan recipe that doesn't take long to prepare and only requires a frying pan and 20 minutes to cook it.

  • 4 chicken breasts, skinned and de-boned

  • 50g Parmesan cheese, Grated

  • 2 tbsp butter

  • 1 Tbsp mixed herbs

  • Salt

  • Pepper

  • 1/2 cup breadcrumbs

  • 1.5 Cups of Tomato based sauce

  • 100g cup mozzarella cheese, grated

  • 1.5 cups pasta

  • 1 Sprig of Coriander

  • 1 egg

Mix the breadcumbs with the mixed herbs and salt and pepper and then beat the egg.

Hit the chicken fillets with a mallet untill they are nice and flat and then dip them in the egg mixture and then striaght into the breadcrumbs.

Do this with each piece of chicken and then add them straight into a how frying pan with the melted butter in.

Cook the chicken gently on both sides untill it turns a mellow brown colour. Add the tomato sauce and then cover and let it simmer gently for about 10 minutes

Add the grated cheeses to the top and let it melt while you simmer for a few minutes more. Serve with a sprinkle of fresh corinader.
