Simple Chinese Garlic Chicken



This is a fantasticly simple Chinese Garlic chicken recipe that is ound to impress. We love it because it's like a big lie. It's so easy to make but looks and tastes amazing when you bring it out onto to the table. Your guests will think you are a master chef!

Ingredients

For the Sauce

  • 2 tspns white wine vinegar (or cider vinegar if you must)

  • 2 tsp brown sugar

  • Splash of water

  • 2 Tbsp Sherry (or Saki if you have it, unlikely

  • Soy sauce

  • 1 tspn cornstarch

  • 1 tsp chili paste, or however much you want

For the Chicken

  • 4 Chicken breasts

  • 1 Tbsp sherry

  • 4 spring onions

  • 2 Broccoli heads

  • 1 Tbsp cornstarch

  • White of one egg

  • Vegetable oil

  • 1 teaspoon minced gingerroot

  • 5 Garlic cloves, crushed

Method

For the Sauce

Well this is pretty simple, just mix all of the ingredients in the sauce section together and set aside.

Wow that is simple!

For the Chicken

Start beating the egg white and then add 1 tsp of cornstarch and mix untill it goes airy and frothy. Keep beating the eggs and then add 1 tbsp of sherry.

Get the chicken breasts and cut them into small thin shreds and add them to this egg white mixture. Set aside for about 30 minutes.

Chop the peppers, broccoli and spring onions and crush the ginger and garlic.

Heat some oil in a large wok and add the chicken shreds. Stir fry untill they turn a nice brown colour.

Add the pepper, garlic, broccolli, ginger, and onions. Stir continuesly.

Stir the sauce you made earlier and add it to the wok. Let it simmer for a few minutes while you keep stiring.

Check the chicken is cooked and then serve with some freshly cooked rice.
