Jerk Chicken Recipe
This is a wonderful simple jerk chicken recipe all the way from Jamaica man! I hope you enjoy it. There are a million different ways of cooking this dish so if kn ow how to make it better than us, just let us know - although we highly doubt you do!
- 4 boneless chicken breasts
- 1 small onion, diced
- 3 tbsp brown sugar
- 2 cloves of crushed garlic
- 4 tbsp soy sauce
- 1/2 tbsp all spice
- 4 tbsp red wine (optional)
- 1 tbsp sesame oil
- 1 tbsp chilli powder
Dig out your foos processor and add the onion, wine, sugar, soy sauce, garlic, sesame oil and chilli powder. Blend for a couple of minutes or untill creamy in texture.
Cut the chicken into medium sized strip and add to a bowl along with mixture. Cover with clingfilm and leave to marinade for about 45 - 90 minutes in the fridge.
Preheat the grill and wip out the chicken. Put the marinade to one side. Cook the chicken for about 15 minutes turning regularly. Ensure that the chicken is thoroughly cooked before serving.
Heat the marinade in a small pan untill hot and then pour over the chicken just before you serve. Bon apetit!!
